I want to upgrade my Xphone IIm to WM 5.0
Which ROM should I use?

None, there isn't one. If you try to use any of the available ROMs, your phone will either not accept them, or not work anymore.

The ROM for Xphone II is available.

I've that on my Xphone IIm and all I can say, it is much faster than WM2003.

cons:
Poor Camera quality
Internet explorer button not working
Camera 1 touch button not working

It's not really worth trying to update to WM5 as there has never been an official ROM for the device and so you will not get the best out of your device.
